Ingredients
- Mozzarella 500gr
- Dry white wine 250ml
- Garlic (1 Clove)
- Cornstarch 20g
- Lemon juice
- Milk 100ml
- Water 100 ml
- White onion (15g)
- Breadsticks (12 pieces)
Preparation
- Prepare the cheese:
Grate or cut the mozzarella into small pieces. Reserve. - Infuse the wine:
Peel the garlic and rub it around the inside of the fondue pot. Then leave it inside. - Add the white wine, lemon juice, and chopped onion to the pot. Heat over medium heat until it begins to simmer. Cook for 2-3 minutes to allow the flavors to infuse well.
- Thicken the base:
Dissolve the cornstarch in the milk and add it to the hot wine, stirring constantly. Cook for a few minutes until slightly thickened. - Add the cheese:
Lower the heat and start adding the mozzarella little by little, stirring in a figure-eight motion with a wooden spoon or spatula until it melts completely and the mixture is uniform. - Adjusting the texture:
If the fondue is too thick, gradually add a little hot water (up to 100 ml) until you achieve the desired consistency: creamy but fluid. - Serve:
Remove the garlic if desired. Bring the fondue to the table in a special pot or container that keeps it warm. Serve immediately with breadsticks for dipping.
